Professional gas fryer made of AISI 304 stainless steel, designed for intensive use in professional kitchens. Equipped with safety systems, a drain tap and an easy-to-clean construction.
A gas fryer heats a fixed volume of oil with a burner beneath the vat. The burner's flame transfers energy directly to the oil, raising its temperature quickly and holding it steady across the entire vat. This direct heating method gives fast recovery times after food is added, so batches cook at the same rate and colour. A thermostat monitors the oil and cycles the burner to maintain the set point, while a flame-failure device cuts the gas if the flame goes out, preventing unburnt gas from building up.
The operator lowers a basket of food into the hot oil, where it fries until the timer signals. The basket is then lifted, drained and emptied. A drainage tap at the base of the vat lets used oil run out without tilting the unit, and a lid keeps the oil clean between services. Adjustable legs level the fryer on uneven floors, and a neutral cabinet beneath provides dry storage for baskets, lids and tools.
The fryer is built from 18/10 AISI 304 stainless steel, satin-finished with Scotch-Brite for a smooth, durable surface. The worktop is 1 mm thick with rounded edges, and chrome-plated details add corrosion resistance. IPX5-rated waterproof control knobs protect the gas valve and thermostat from splashes and cleaning sprays.
Controls include a gas valve to set the burner intensity, a thermostat to choose the frying temperature, and a timer to signal when the batch is ready. A safety thermostat cuts the gas if the oil overheats, and a flame-failure device stops the gas flow if the flame is extinguished.
A 13 litre oil volume allows consistent frying of single batches, while a 10 kg/h capacity matches the output of a busy service period. The 9.3 kW power rating requires a dedicated gas line capable of supplying the full load without pressure drop. The 61 kg weight means the unit is moved with a trolley or two people, and the 400 mm width fits standard worktop runs in professional kitchens.
Cleaning involves draining the oil through the tap, removing the basket and lid for washing, and wiping down the stainless steel surfaces with a non-abrasive cloth. The rounded edges and satin finish reduce grease build-up, and the waterproof controls allow safe hose-down without electrical risk.
The model is available with one or two frying vats, each supplied with a basket, lid and basket holder. The single-vat version shown here includes a neutral cabinet for storage beneath the fryer.
