Professional gas fryer with an 25L oil tank, designed for intensive use in professional kitchens.
A gas fryer that heats a fixed volume of oil with direct burners beneath the tank, transferring heat through the metal base and walls. The oil bath reaches frying temperature quickly and holds it evenly, so food cooks at a steady rate without cold spots. A thermostatic valve regulates the gas flow, maintaining the set temperature automatically once the pilot flame is lit. The pilot and thermocouple form a safety interlock: if the flame fails, the gas supply shuts off immediately, preventing unburned gas from accumulating.
Two baskets, each sized to hold a standard catering portion, lower into the hot oil. The operator sets the timer or watches the food colour, then lifts the baskets to drain above the tank. An integrated neutral cabinet sits alongside the fryer, providing a warm, dry space for holding cooked batches ready for service without cross-contamination.
The sequence begins with filling the tank to the marked level, lighting the pilot with the piezo igniter, and setting the thermostat. Once the oil reaches temperature, the baskets are loaded and lowered. After frying, the baskets rest on the chrome grid to drain, and the food moves to the neutral cabinet or serving area. The oil filter basket, removable for cleaning, catches crumbs and extends oil life by keeping debris out of the main tank.
Construction is 18/10 AISI 304 stainless steel throughout, with a 2 mm thick worktop and satin-finish Scotch-Brite surfaces. Rounded corners and a raised rear edge simplify daily wiping and reduce dirt traps. Chrome-plated fittings and a hinged lid on each tank add durability and hygiene. The front control panel lifts off for access to internal parts during maintenance.
Controls include a piezo igniter for the pilot flame, a thermostatic knob to set oil temperature, and a gas valve with thermocouple safety. A conversion kit for alternative gas types is supplied, and adjustable legs allow levelling on uneven floors. Flue gases exit through a rear duct, keeping the kitchen atmosphere clear.
The 20 kW gas input draws a steady load from the mains supply, suitable for a dedicated commercial circuit. The 230 V electrical requirement powers only the piezo igniter and safety devices, keeping the current draw minimal. A 25 litre oil volume supports continuous frying of 25 kg of food per hour, matching the throughput of a busy service period. The 75 kg weight and 400 x 900 x 900 mm footprint require a stable floor and fixed position near gas and flue outlets.
Daily cleaning involves removing the oil filter basket, wiping the tank interior, and rinsing the chrome grid. The front panel lifts off to reach the gas valve and thermostat for periodic inspection. The neutral cabinet is wiped down after each service to maintain hygiene standards.
The F25-94G model includes a neutral cabinet as standard; the same fryer is available without the cabinet under a different article number. A final cover plate TPA-9 is supplied to seal the rear flue outlet when the unit is not in use.
