Professional gas fryer with 8 + 8 L oil tanks, designed for intensive use in professional kitchens.
A gas fryer that heats two independent tanks of oil with direct flame burners, allowing simultaneous frying of different foods at separate temperatures. The burners sit beneath stainless steel vats; when the thermostat calls for heat, the gas valve opens and the pilot light ignites the main flame. Hot combustion gases rise through flues built into the vat walls, transferring heat to the oil without direct contact. A thermocouple monitors the flame and shuts the gas off if the pilot fails, while the thermostatic valve modulates the flow to hold the set temperature within a narrow band. The result is rapid recovery of oil temperature after a basket is lowered, so food cooks evenly and absorbs less oil than in a cooler vat.
The operator loads each basket with the portion to be fried, sets the thermostat for the required temperature, and lowers the basket into the heated oil. A hinged wire grid keeps food submerged and allows oil to circulate freely around it. After the set time, the basket is lifted, drained over the vat, and the food transferred to a holding shelf or serving area. The neutral cabinet above the vats provides a warm, dry space for plates or finished portions, keeping them ready for service without further cooking.
Construction is entirely in 18/10 CrNi stainless steel, satin-finished with Scotch-Brite for durability and hygiene. The worktop is 2 mm thick, rounded corners and raised rear edge prevent spills from running onto the floor, and all control knobs are chrome-plated. Each vat has a hinged lid to reduce heat loss and splashing, and a removable oil filter with basket support keeps crumbs and debris out of the oil, extending its usable life. Flue gases are vented through a rear exhaust, and the front control panel lifts off for access to internal components during cleaning.
Controls include a piezo ignition button, a thermostat knob for each vat, and a gas shut-off valve. The thermostat sets the oil temperature; the piezo ignites the pilot light without an external flame; the shut-off valve isolates the gas supply when the fryer is not in use. A conversion kit for different gas types is supplied, and the adjustable legs allow the unit to be levelled on uneven floors.
The 10 kW power rating means the fryer requires a dedicated gas line capable of delivering the full load without pressure drop. The 8+8 litre volume refers to the usable oil capacity of each vat, giving enough space for two full baskets without crowding. The 63 kg weight indicates the unit must be moved with a trolley or two people; the 400 mm width fits a standard worktop module, while the 900 mm height allows the neutral cabinet to be used without stooping. The 12 kg/h capacity is the maximum throughput of fried food when the fryer is operated continuously at full temperature.
Daily cleaning involves lifting out the oil filter and washing it, wiping the interior of the vats with a soft cloth, and removing the front panel to clean behind the controls. The stainless steel surfaces can be sanitised with standard kitchen chemicals; abrasive pads should be avoided to preserve the satin finish. The oil should be filtered or replaced according to the manufacturer's schedule, and the flue exhaust checked periodically for blockages.
