The CP-66G is a professional gas pasta cooker with a 40 L tank, designed for fast and efficient cooking of pasta, vegetables and other foods in professional kitchens.
A gas pasta cooker heats a large volume of water rapidly by burning gas beneath a stainless-steel tank. The flame transfers energy directly to the water, raising its temperature quickly and maintaining a rolling boil without the electrical load of an immersion element. This method keeps the water at a consistent high heat, essential for cooking pasta evenly and preventing sticking.
To operate the LOTUS CP-66G, connect the gas supply and electrical power. Open the built-in water filling tap to fill the 40 L tank; the automatic sensor stops the flow once the correct level is reached. Ignite the burner using the piezoelectric ignition, which creates a spark without an external flame. Adjust the gas valve to control the flame size and water temperature. Load the perforated pasta baskets with dry pasta and lower them into the boiling water. The water presence sensor ensures the burner shuts off if the water level drops too low, preventing overheating. Once the pasta is cooked, lift the baskets using the safety handles and drain. For emptying, connect a hose to the floor drain outlet and open the overflow safety valve.
The construction is 18/10 AISI 304 CrNi stainless steel with a Scotch-Brite satin finish, including a 1 mm thick worktop with rounded edges and a rear splashback. Chrome-plated components add durability and ease of cleaning. The tank itself is made of AISI 316 stainless steel, chosen for its superior resistance to corrosion from salt and acidic water. An open cabinet design allows storage beneath the unit, while adjustable feet ensure a stable, level installation on uneven floors.
Controls include IPX5 water-resistant knobs for gas flow and ignition. The gas valve incorporates a thermocouple and safety valve, cutting the gas supply if the flame extinguishes. A pilot flame provides continuous ignition, and the piezoelectric system eliminates the need for matches or lighters.
A 40 L capacity allows large batches of pasta to be cooked simultaneously, reducing waiting times in a busy service. The 13.95 kW gas input delivers rapid heat-up, while the minimal 0.02 kW electrical requirement powers only the ignition and safety sensors, keeping electrical load low. The 230 V supply matches standard UK single-phase circuits, avoiding the need for a dedicated high-power line. At 84 kg, the unit is heavy enough to remain stable during use but can be moved with a trolley or two people. The 600x600 mm footprint fits standard worktop spacing, while the 900 mm height allows comfortable access for loading and unloading.
Cleaning involves draining the tank via the floor drain connection, then wiping down the stainless-steel surfaces with a non-abrasive cloth. The front control panel removes easily, granting access to internal components for thorough cleaning or maintenance. The water level sensor and overflow valve prevent spills, while the rounded edges and satin finish reduce the risk of food debris sticking.
The CP-66G is supplied with nozzles for both Natural Gas and LPG, allowing installation in kitchens with either supply. Perforated pasta baskets are available separately in different sizes to suit various pasta shapes and quantities.
