Professional gas pasta cooker with automatic water filling, water level control and overflow protection. A gas pasta cooker heats water in a deep vat with powerful burners beneath. The water circulates by convection, keeping an even temperature across the entire volume so every portion cooks at the same rate. An automatic fill system adds water to the set level and holds it there, removing the need to watch and top up manually during service. The vat is sized to hold enough water to submerge long pasta shapes without crowding, while the burners recover temperature quickly when cold pasta is added, preventing a drop that would slow cooking.
To start, the operator connects the gas supply and the single-phase 230 V electrical circuit for the control panel. The adjustable legs are set to level the unit on the worktop. The water inlet tap is opened, and the fill system is primed by pressing the start button; the sensor detects the rising level and shuts off the flow at the correct point. The gas valve is turned on, and the burners are lit with the ignition switch. The temperature is set on the control knob, and the cooker is left to reach the working range. Perforated baskets of pasta are lowered into the vat; the water covers them fully, and the burners maintain the set temperature. When the pasta is ready, the baskets are lifted out and drained over the vat, then tipped onto a tray or serving dish. The water remains hot for the next batch, and the fill system replaces any water lost to evaporation or splashing.
The construction is 18/10 AISI 304 stainless steel with a Scotch-Brite satin finish. The worktop is 2 mm thick with rounded edges, and the rear protective panel is also stainless steel. Chromed details include the control knobs and trim. The vat itself is AISI 316 stainless steel, chosen for its resistance to corrosion from salt and acidic cooking water, giving a longer service life than standard grades. The control handles are rated IPX5 for water resistance, allowing safe cleaning with a hose. An overflow protection system and floor drain connection are built in for easy water removal after service.
The controls consist of a gas valve with a thermocouple safety shut-off, a temperature control knob, an ignition switch, and a water fill start button. The gas valve includes a safety valve that cuts the supply if the flame goes out, preventing unburned gas from escaping. The temperature knob adjusts the burner output to maintain the set water temperature. The ignition switch lights the burners electrically, and the fill button activates the automatic water fill system.
The 40 L capacity means the vat holds enough water to cook large batches of pasta without refilling between services. The 13.95 kW gas input provides the heat to bring the water to temperature quickly and to recover after cold pasta is added, keeping service speed high. The 0.035 kW electrical load is for the control panel and ignition, drawing minimal current from a standard 230 V circuit. The 68 kg weight requires a sturdy worktop and may need two people to move the unit into place. Cleaning involves draining the vat through the floor drain connection, then wiping down the stainless steel surfaces with a non-abrasive cloth. The control panel can be cleaned with a damp cloth, as the IPX5 rating protects against water jets. The front control panel is removable for access to the burners and water fill components, allowing thorough cleaning of the internal parts. The perforated baskets, if used, are washed separately in a sink or dishwasher.
The cooker is supplied with a single end closure element (TPA-9) and nozzles for both natural gas and LPG, allowing installation with either gas type. The adjustable legs provide stability on uneven floors and can be set to the correct height for the worktop.
