An induction cooking top transfers energy directly into magnetic cookware, heating only the pan and its contents without warming the surrounding air or surface. The process relies on a high-frequency electromagnetic field generated beneath the ceramic glass top; when a pan with a magnetic base is placed on the zone, the field induces currents within the metal, producing heat instantly and precisely where it is needed. This method eliminates open flames, reduces ambient heat in the kitchen and allows rapid temperature changes, making it suitable for high-volume cooking where speed and control are critical.
The operator selects a zone, places a compatible pan on the marked area and sets the power level using the water-resistant control knobs. Each zone operates independently, so two pans can be used simultaneously at different settings. The unit activates only when a pan is detected, conserving energy when not in use. Once cooking is complete, the pan is removed and the zone cools quickly, leaving no residual heat on the surface.
The cooking top is built from 18/10 stainless steel, including a 2 mm thick work surface finished in a Scotch-Brite satin texture. Edges are rounded and details are chrome-plated for durability and ease of cleaning. A removable front panel allows access to internal components for maintenance. Adjustable stainless steel legs provide stable positioning on uneven floors, and optional pan guides can be fitted to secure cookware during vigorous stirring or frying.
The 20 kW power rating requires a three-phase 400/440 V supply, typical of professional kitchens with high electrical demand. The 800 mm width and 900 mm depth create a compact footprint that fits standard worktop installations, while the 76 kg weight ensures stability during heavy use. The IPX5-rated controls protect against low-pressure water jets, allowing safe cleaning with a hose.
Cleaning involves wiping the ceramic glass surface with a damp cloth after each use to remove spills. The stainless steel body can be cleaned with mild detergent and water, avoiding abrasive pads that could damage the satin finish. The removable front panel simplifies access for deeper cleaning of internal areas, and the water-resistant knobs prevent moisture ingress during routine washdowns.
The PCIT-98ETX is designed for intensive professional use, supporting frying, boiling, sautéing and shallow frying. Its dual independent zones allow simultaneous preparation of different dishes without flavour transfer or heat interference.
