An induction cooking top generates heat directly inside ferromagnetic cookware through a high-frequency magnetic field. The ceramic surface itself stays cool, transferring energy only to pots and pans with a magnetic base. This method eliminates open flames, reduces ambient heat and speeds up cooking by concentrating power where it is needed. Because the surface does not store heat, temperature changes are instantaneous, giving precise control over sautéing, frying and simmering without overshoot or lag.
The LOTUS PCIT-98ET is built for continuous service in commercial kitchens. Two independent cooking zones allow separate programmes to run simultaneously. Each zone senses the pan's presence and adjusts the field to its size, so small saucepans and large stockpots both receive full power without manual resizing. The operator places the pan on the marked area, selects the desired power level with the water-resistant control knobs, and starts the programme. A pan-positioning guide, where fitted, keeps cookware centred for even heating and prevents accidental tipping. Once cooking is complete, the surface cools rapidly, allowing immediate cleaning or reloading.
The unit is constructed from 2 mm 18/10 stainless steel (AISI 304) with a Scotch-Brite satin finish. Rounded edges and chrome-plated trim reduce sharp corners and simplify wiping. The front panel lifts off for access to the interior, and adjustable stainless steel legs level the top on uneven floors. An IPX5-rated waterproof control assembly withstands splashes and hose-down cleaning.
A 20 kW total power rating requires a 400 V three-phase circuit, the standard supply for heavy-duty catering equipment. The 76 kg weight ensures stability during vigorous stirring or lifting of loaded pans, while the 800 mm width fits standard worktop cut-outs in professional kitchens. The 900 mm depth allows safe clearance behind the unit for ventilation and tap access.
Cleaning is straightforward: the ceramic surface wipes clean with a damp cloth once cool, and the removable front panel gives access to the interior for periodic degreasing. The stainless steel body resists corrosion and staining, and the satin finish hides minor scratches from daily use.
