An induction wok hob transfers energy directly into the base of a magnetic pan, heating only the food and the vessel, not the surrounding air or the hob itself. A high-frequency electromagnetic field beneath the ceramic glass top creates eddy currents in the steel, generating heat precisely where it is needed. This method eliminates open flames, reduces ambient heat and speeds up response to temperature changes, making it suitable for fast-paced professional kitchens.
The operator places a compatible wok or pan on the marked cooking area, selects the desired power level using the digital or standard control, and adjusts the setting as cooking progresses. The hob heats only when the pan is present, cutting energy use and improving safety. Rolling racks lock the pan in place, preventing movement during vigorous stir-frying.
Constructed from CrNi 18/10 AISI 304 grade stainless steel with a Scotch-Brite satin polish finish, the unit features a 2 mm thick worktop and chromed details for durability and ease of cleaning. The ceramic glass top resists thermal shock and supports rapid heating cycles.
The 5 kW power rating requires a 400 V three-phase supply, typical of commercial kitchen circuits.
