Professional PAELLERO gas range with a static gas oven, designed for use with large-diameter pans, wok pans, and other large cookware in professional kitchens. The durable AISI 304 stainless steel construction ensures a long service life and easy daily maintenance.
A single 18.8 kW gas burner delivers concentrated heat for large paella pans and stock pots. The burner mixes gas and air at the injector, ignites with a pilot flame, and transfers energy directly to the pan base. A thermocouple monitors the pilot; if the flame fails, the safety valve shuts off the gas supply automatically. Piezo ignition provides instant lighting without matches or external sparks.
The operator places the pan on the stainless steel trivet, lights the burner with the piezo button, and adjusts the control knob to the required flame size. A drip tray beneath the burner collects spills for easy removal. Exhaust gases are channelled through a rear duct to keep the work area clear. When cooking is complete, the knob is turned off and the pilot extinguishes; the thermocouple cools and the safety valve closes.
The range is built from 18/10 AISI 304 stainless steel throughout, finished in a Scotch-Brite satin polish. The 2 mm thick worktop has rounded edges and chrome-plated trim. An open stainless steel shelf below provides storage for utensils and trays. IPX5-rated waterproof control knobs prevent ingress during cleaning. Adjustable legs allow levelling on uneven floors, and a rear protective panel shields the wall from heat and grease.
The 18.8 kW power rating indicates a heavy load on the gas supply; a dedicated commercial line is required. The 800 mm width fits standard worktop runs, while the 159 kg weight necessitates a sturdy floor and two-person handling. The unit is supplied with conversion nozzles for either natural gas or LPG, and the drip tray and control panel front are removable for access to internal components.
Cleaning involves removing the drip tray and control panel, wiping down the stainless steel surfaces with a damp cloth, and rinsing the tray. The trivet and burner head lift off for scrubbing, and the rear duct should be checked for blockages. No doors are included, so the oven cavity is not present and does not require cleaning.
The PAELLERO 70 is classified as a range for professional catering equipment catalogues.
