Professional induction range with 2 cooking zones and a cabinet. The AISI 304 stainless steel construction and glass ceramic surface ensure durability, rapid heating and efficient everyday operation.
An induction cooking range transfers energy directly into magnetic cookware through a high-frequency electromagnetic field beneath a glass ceramic surface. The field generates heat only in the base of the pan, leaving the surrounding surface cool and eliminating wasted energy. This method allows rapid temperature changes and precise control, essential for high-temperature cooking techniques such as stir-frying or searing.
The operator places a magnetic steel pan on the glass ceramic surface, selects the desired power level using the water-resistant control knobs, and adjusts the temperature setting. The unit heats the pan instantly, responding to changes in seconds. A locking system secures the settings during use, preventing accidental adjustments. Adjustable feet ensure the unit sits level on uneven floors, while rounded edges and a satin finish reduce the risk of injury and simplify cleaning.
The PCI-78ETX is constructed from 2 mm thick CrNi 18/10 AISI 304 stainless steel with a Scotch-Brite satin finish. Chrome-plated components and a glass ceramic cooking surface form the worktop, designed to withstand the demands of professional kitchens. IPX5-rated control knobs protect against water ingress, allowing safe cleaning with a damp cloth.
The 20 kW power rating requires a 400/440 V three-phase electrical supply, suitable for commercial kitchen circuits. The 70 kg weight indicates a sturdy, freestanding unit that remains stable during use but may require two people to move. The 800x705x900 mm footprint provides a substantial cooking area while fitting within standard worktop layouts.
Cleaning involves wiping the glass ceramic surface after each use to remove spills, while the stainless steel frame can be cleaned with a damp cloth and mild detergent. The satin finish resists fingerprints and scratches, reducing the need for frequent polishing. The WOK-compatible model accommodates concave steel WOK pans, expanding the range of dishes that can be prepared.
The PCI-78ETX is categorised under professional induction and WOK cooking ranges, designed for high-temperature applications in commercial kitchens.
