Three-phase induction cooking top 75x57 cm
Digital control.
4 zones
An induction cooking top transfers energy directly into magnetic cookware without heating the surface itself. A high-frequency electromagnetic field beneath the ceramic glass generates eddy currents in the base of a pan made of ferromagnetic steel. These currents produce heat only where the pan touches the glass, so the surrounding worktop stays cool and energy is not wasted on the air. The method gives instant response to temperature changes and precise control over delicate sauces or rapid boiling, while eliminating open flames and radiant heat in the kitchen environment.
The operator places a pan with a magnetic base on one of the high-output cooking zones. A control panel, either standard rotary knobs or an optional digital interface, sets the power level from low simmer to full boil. The hob heats only the pan and its contents, so the ceramic glass remains safe to touch around the cooking area. Rolling racks at the rear lock the pan in position, preventing accidental movement while the field is active. When the pan is lifted, the field cuts off automatically, stopping the heating cycle.
Fabricated from CrNi 18/10 AISI 304 grade stainless steel, the unit has a 2 mm thick worktop with a Scotch-Brite satin polish finish. Chromed details provide contrast and protection at edges and corners. The ceramic glass surface resists thermal shock and is easy to wipe clean after use.
A 20 kW power rating indicates a substantial electrical load, requiring a 400 V three-phase circuit with 50/60 Hz supply. This configuration is typical for professional kitchens where multiple high-power appliances run simultaneously. The 40 kg weight ensures stability on a worktop or counter, while the 800 mm width and 600 mm depth fit standard kitchen modules, leaving space for adjacent equipment.
Cleaning involves wiping the ceramic glass with a damp cloth and mild detergent to remove spills, while the stainless steel frame can be cleaned with non-abrasive cleaners to maintain the satin finish. The fixing system secures the hob to the worktop, preventing movement during use.
The PCID-68ETDX is a professional induction hob designed for commercial kitchens, offering rapid, precise and energy-efficient cooking with a durable stainless steel and ceramic glass construction.
