The Moka Express is a type of coffee pot designed for brewing coffee on the stovetop. Its operating principle relies on steam pressure. Water is placed in the lower chamber, and coffee grounds are added to the filter basket in the middle. When heated, the water boils, creating steam. This steam pressure forces the hot water up through the coffee grounds and into the upper chamber, where the brewed coffee collects.
To use the Moka Express, first fill the lower chamber with cold water up to the level of the safety valve. Insert the filter basket and fill it loosely with ground coffee, levelling it without pressing down. Screw the upper chamber tightly onto the base. Place the coffee pot on a medium heat source. Coffee will begin to flow into the upper chamber. Once the flow slows and a gurgling sound is heard, remove the pot from the heat to prevent bitterness.
