The BCM/4011 blast freezer is an ideal solution when rapid and safe freezing is needed to preserve product structure, quality, and flavor, while simultaneously ensuring energy efficiency and easy maintenance.

Gets rapidly lower the core temperature of foods: chilling from +90°C to +3°C in 90 minutes and freezing from +90°C to -18°C in 240 minutes.

This professional blast chiller/freezer is a compact yet powerful solution for intensive food processing in restaurants, bakeries, production facilities, and other professional kitchens where high precision and multifunctionality are essential. The unit is made of high-quality stainless steel, ensuring durability, longevity, hygiene, and easy maintenance even with daily heavy use.

The internal capacity is designed for one GN 2/1 or 600x800 mm trolley, making it ideal for small to medium-sized production operations. The construction features 70 mm thick insulation, providing high energy efficiency, excellent temperature retention, and uniform chilling or freezing processes.

Control is provided via a modern 7-inch touchscreen offering a multifunctional and multilingual user interface, ensuring easy and intuitive operation regardless of staff language skills. Both hard (intensive) and soft (gentle) chilling modes are available, as well as freezing by time or core probe, allowing maximum control over each product’s processing.

In addition to basic functions, the unit offers several advanced options. The leavening function with steamer is particularly useful for bread and pastry preparation. The slow cooking mode up to +70°C is suitable for gentle thermal processing, preserving product structure and quality. The thawing function ensures even and safe thawing without temperature shocks. Pre-chilling and drying cycles, continuous operation, and a fish sanitizing cycle are also included.

The fan speed can be adjusted at all chilling and freezing stages to ensure optimal air circulation for different product types. The unit includes a core temperature probe and a USB port for data management. It also features a Wi-Fi supervision system for remote monitoring of operation and parameters.

Automatic hot gas defrosting greatly simplifies maintenance and helps keep the unit operating at optimal conditions. The supply includes a 52 cm wide stainless steel ramp for easy trolley access. Trolleys are not included.

Compliance with climate class 5 means this blast chiller/freezer reliably operates even at ambient temperatures up to +40°C, ensuring consistent high performance in any professional working environment.
