Charcoal Oven - Grill
A charcoal oven concentrates heat from burning coal inside a sealed chamber, raising the temperature far above an open grill. The thick refractory steel walls retain and reflect the heat, cooking food faster and more evenly. Because the heat is trapped, less fuel is needed for the same output, and the enclosed space prevents flare-ups that can char food unevenly.
The KOPA Charcoal Oven Basic 300 is loaded with coal through a front door, then lit. Once the temperature reaches the set range, trays of food are slid onto the grill shelf. The operator monitors the temperature gauge and adjusts the air vents to control the burn rate. After cooking, the trays are removed and the ash drawer is emptied.
The oven is built from thick refractory steel, chosen for its ability to withstand repeated heating and cooling without warping. The interior grill measures 380 mm by 570 mm, providing a compact but high-capacity cooking surface. A powerful exhaust system draws smoke away at 2500 m³ per hour, keeping the kitchen air clear.
The 3 kW heating element assists the coal in reaching the target temperature quickly, reducing the time needed to start service. The temperature range of 250 to 350 °C allows for searing steaks, grilling fish and roasting vegetables without switching appliances. A full load of 40 trays can be processed in 24 hours, giving a steady throughput for busy kitchens.
Coal consumption varies between 3 and 6 kg depending on the menu and ambient conditions. Cleaning involves brushing ash from the grill and emptying the ash drawer after each service. The refractory steel interior can be wiped down with a damp cloth once cooled. The exhaust system should be checked regularly to maintain the 2500 m³ per hour flow rate.
