Charcoal Oven - Grill
A charcoal oven concentrates radiant heat from burning coals inside a sealed chamber, raising the temperature far above what an open grill can sustain. The thick refractory steel walls absorb and reflect that heat, creating an intense, even cooking environment that sears food quickly without drying it out. Because the heat is trapped, less fuel is needed to maintain the temperature, and the food cooks faster—steaks, fish, vegetables and pan dishes all emerge with a crisp exterior and juicy interior in a fraction of the time an open grill would take.
To operate the KOPA Charcoal Oven C Type 500, the operator loads the charcoal tray at the base, lights the coals and allows them to reach the working temperature. The grill grate is then positioned inside the chamber, and food is placed directly on it or in pans. Once the oven is closed, the temperature is monitored and adjusted by controlling the air intake and exhaust dampers. After cooking, the food is removed, and the remaining coals are left to burn out or are extinguished for reuse.
The oven is built from thick refractory steel, chosen for its ability to withstand repeated heating cycles without warping or degrading. A stand on legs or wheels is integrated beneath the chamber, providing storage for utensils and fresh charcoal. The exterior finish matches the oven, creating a cohesive look suitable for open kitchens where presentation matters.
Controls consist of adjustable air vents and an exhaust damper, which regulate the airflow and temperature inside the chamber. The exhaust system is rated at 3400 m³/h, removing smoke at a maximum rate of 12.5 g/s to keep the kitchen environment clear.
A capacity of 110 trays per 24 hours indicates the volume of food the oven can handle in a continuous service, making it suitable for busy restaurants. The 7.5 kW power rating reflects the electrical load if any auxiliary components are present, while the 255 kg weight shows that the unit is designed to be moved with a pallet truck or similar equipment. The footprint of 912 mm wide, 700 mm deep and 1391 mm high, with a grill area of 530 x 764 mm, determines the space it occupies on the kitchen floor and the size of food items it can accommodate.
Cleaning involves removing ash from the charcoal tray after each service, brushing the grill grate and wiping the interior refractory surfaces to prevent build-up. The exhaust system should be checked periodically to ensure it remains unobstructed.
The oven is available in a configuration with either legs or wheels, allowing for fixed or mobile installation.
