Charcoal Oven - Grill
A charcoal oven concentrates heat from burning coal inside a sealed chamber, raising the temperature far above what an open grill can reach. The refractory steel walls reflect and retain the heat, so food cooks faster and more evenly. Instead of losing energy to the air, the oven channels it directly into the food, cutting cooking times and increasing throughput without extra fuel.
To start the KOPA Charcoal Oven Basic 500, load the firebox with 8–12 kg of charcoal. Light the coal and let it reach full heat; the oven will climb to 250–350 °C. Place food on the 530 × 764 mm grill surface, close the door and monitor the temperature with the built-in gauge. The 3400 m³/h exhaust system removes smoke at up to 12.5 g/s, keeping the kitchen air clear while maintaining a steady draught that feeds the fire. When the food is done, remove it and replenish the coal as needed to keep the oven at temperature for the next batch.
The oven is built from thick refractory steel that withstands high temperatures and resists warping. The exterior measures 912 mm wide, 700 mm deep and 1062 mm high, giving it a compact footprint for its 110-tray daily capacity. A 7.5 kW power rating reflects the electrical load for fans and controls, not the heat output from the coal. The 210 kg weight requires a sturdy floor and a trolley for moving.
Controls include a temperature dial that sets the target range and a fan speed adjustment that regulates the exhaust rate. The high airflow prevents smoke build-up and keeps the coal burning efficiently, while the sealed chamber ensures food grills rather than bakes.
Cleaning involves removing ash from the firebox after each service and brushing the grill surface to clear residue. The refractory steel interior can be wiped down with a damp cloth once cooled, and the exhaust duct should be checked periodically for blockages.
