Charcoal Oven - Grill
A charcoal oven harnesses radiant heat from burning coal to sear and cook food at temperatures far above those of a conventional grill. The coal bed sits below a thick refractory steel chamber that absorbs and re-radiates the heat evenly across the entire cooking surface. This closed environment traps energy, slashing cooking times and boosting throughput without drying the food. Smoke and hot gases rise through a high-capacity exhaust system, keeping the workspace clear and the flavour concentrated in the dish.
To operate the KOPA OC Type 300oc, load the lower coal tray with 3 to 6 kg of charcoal and ignite it. Once the chamber reaches the set temperature between 250 and 350 °C, slide the two-tier stainless steel rack into place. Place food directly on the grill bars or in pans on the upper shelf to keep cooked items warm. The oven's exhaust fan draws smoke away at a rate of 2500 cubic metres per hour, maintaining a steady airflow that prevents flare-ups and ensures even doneness. After cooking, remove the racks for cleaning and replenish the coal as needed to maintain the heat.
The oven is built from thick refractory steel that retains heat and resists warping at high temperatures. The two-level rack system is made of stainless steel for durability and easy cleaning. The exterior footprint measures 712 mm wide, 548 mm deep and 1121 mm high, with an internal grill area of 380 by 570 mm. A 3 kW electric element assists the coal in reaching and holding the target temperature, reducing the time needed to bring the oven up to heat.
The temperature range of 250 to 350 °C opens processes that standard grills cannot achieve: searing steaks to a crust while keeping the centre rare, charring vegetables without steaming them, and grilling fish so the skin crisps without sticking. The 124 kg weight ensures the unit stays stable on the floor, while the daily capacity of 40 trays allows continuous service in a busy kitchen. The exhaust system's maximum smoke flow of 4.9 grams per second keeps the kitchen air clean and the cooking environment comfortable.
Cleaning involves removing the racks and brushing off ash and food debris. The refractory steel chamber can be wiped down once cooled, and the coal tray emptied and relined with fresh fuel. The stainless steel racks are dishwasher-safe or can be scrubbed by hand.
The KOPA Charcoal Oven OC Type 300oc is categorised under professional charcoal ovens in the KOPA catalogue.
