Charcoal Oven - Grill
A charcoal oven designed to harness radiant heat from burning coal, delivering intense grilling at temperatures from 250 °C to 350 °C. The thick refractory steel lining captures and evenly distributes heat, reducing grilling times significantly compared to open grills. This efficiency allows the oven to handle up to 80 trays in a full day's service without interruptions for reheating.
Charcoal is loaded into the firebox below the cooking chamber, ignited, and brought to the required temperature. Food is placed on the grill grate or in pans, and the door is closed to lock in heat and smoke. The exhaust system removes combustion gases, maintaining a clear cooking space while retaining the smoky flavour. A two-tier heated rack above the main chamber keeps cooked dishes warm, allowing the grill to be used continuously for the next batch.
The SOC Type 400soc is supported by legs or optional wheels and includes a lower shelf for storing charcoal and utensils. The main chamber and heated rack are also made of stainless steel, ensuring durability and straightforward cleaning under high-heat conditions.
Operation is simple: a single air-intake damper controls the burn rate and temperature. The operator adjusts the damper to maintain the desired range of 250–350 °C, monitoring the coal bed as needed. Coal consumption varies between 5–8 kg per service, depending on the menu and volume of food.
The 4.5 kW power rating applies to the exhaust fan, not the cooking heat, which is generated solely by charcoal. The oven weighs 150 kg, requiring a stable floor and possibly two people to move unless fitted with wheels. Its dimensions of 712 mm wide by 697 mm deep suit most professional work surfaces, while the height allows clearance in standard kitchen ceilings. The grill grate measures 530 mm by 570 mm, offering space for multiple items at once.
Maintenance involves removing ash from the firebox after each use and wiping stainless steel surfaces with a damp cloth. The refractory lining should be checked occasionally for cracks, though its robust construction minimises the need for frequent repairs. Avoid using water or abrasive cleaners on the lining to preserve its heat-retention capabilities.
The SOC Type 400soc is available as a single model with optional wheels for mobility, positioned in the KOPA range for high-temperature charcoal cooking in professional kitchens.
