A coal oven tray holds solid fuel inside a coal-fired oven, concentrating heat beneath the cooking chamber. The tray's metal walls absorb and radiate heat evenly, creating a consistent high-temperature environment for baking bread, roasting meats and slow-cooking dishes that need dry, fierce heat. Unlike gas or electric ovens, which rely on burners or elements, a coal oven uses the tray to contain and control the burning fuel, allowing the chef to adjust the fire by adding or removing coal without disturbing the oven's internal temperature.
To use the KOPA T300, the operator slides the tray into the oven's designated slot, fills it with coal, and ignites the fuel. Once the coal is burning steadily, the tray radiates heat upwards into the oven chamber. The chef monitors the fire through the oven's viewing window or door, adding more coal as needed to maintain the desired temperature. After service, the tray is removed and the remaining ash is emptied into a metal bin for safe disposal.
The T300 is constructed from heavy-gauge steel, chosen for its ability to withstand repeated heating and cooling cycles without warping. The tray's 40 kg weight ensures stability inside the oven, preventing movement when the door is opened or closed. Its footprint of 700 mm by 571 mm fits standard coal-fired ovens, while the 975 mm height allows it to hold enough fuel for long service periods without refilling.
Cleaning is limited to brushing out ash after each use and wiping the tray with a damp cloth to remove soot. No detergents or abrasives are needed; the steel surface is left dry to prevent rust between services.
The KOPA Coal Oven Tray T300 is listed in the catalogue under Oven Accessories for coal-fired appliances.
