A bone saw slices through dense bone and frozen meat by driving a continuous band blade at high speed. The blade runs between two wheels, one motorised and one free, creating a loop that pulls the cutting edge through the product. This method keeps the blade cool and produces a clean cut without crushing, which is essential when portioning large carcasses or preparing joints for further processing.
The operator loads the product onto the sliding work surface, secures it with the meat pusher and aligns it against the portioning device. The adjustable blade guide and blade protection set the depth of cut, while proximity magnetic sensors and the C.D.I. module monitor the blade position and stop the motor instantly if the guard is opened. A low-voltage electrical panel (24 V) controls the motor, and a safety mechanical brake brings the blade to a halt within seconds of power-off. The sawdust drawer collects bone fragments and meat dust, keeping the work area clean.
The frame and all contact parts are made from stainless steel AISI 304, which resists corrosion from blood and cleaning chemicals. The 400 V three-phase supply matches the standard circuit in commercial butchery and meat-processing rooms, while the 2.2 kW motor provides the torque needed for continuous cutting. The 163 kg weight ensures stability during operation, and the 935 mm width fits against a worktop or wall without overhang.
Cleaning involves removing the sawdust drawer, wiping the blade with a food-safe sanitiser and rinsing the work surface and pusher. The blade guide and protection can be adjusted or removed for thorough cleaning, and the low-voltage panel is sealed to prevent water ingress.
