Used for slicing cold meats (ham, salami, bresaola), fresh meats, cheeses, vegetables etc.
A 275 mm rotary slicer built for continuous service in commercial kitchens, the SAVIOLI AFG275 converts whole blocks of meat, cheese or sausage into uniform slices without crushing or tearing.
The machine uses a circular blade that spins at a steady speed, driven by a motor through toothed belts. As the blade turns, the operator slides the food carriage forward; the blade shears the product cleanly, leaving the slice intact. An adjustable fence holds the food at the chosen thickness, so every slice matches the last. The built-in sharpener keeps the blade edge keen, maintaining the cut quality throughout the shift.
To operate, the user unlocks the carriage, places the product against the fence, sets the thickness knob to the desired graduation, and starts the motor. The carriage is then pushed forward in a smooth motion; the blade slices the food and the piece falls onto the receiving tray. Once the batch is complete, the carriage is returned, the blade guard removed, and the surfaces wiped down. The sharpener is engaged briefly to touch up the blade before the next use.
The slicer is constructed from anodised aluminium, chosen for its resistance to corrosion and ease of cleaning. The blade guard and carriage are removable, allowing access to every surface that contacts food. A graduated knob controls the fence position, while a simple on-off switch starts and stops the motor.
The 0.17 kW motor draws power from either a single-phase 230 V or three-phase 400 V supply, fitting the circuits commonly installed in professional kitchens. At 18 kg, the unit is light enough to move with a trolley yet stable on a worktop. The footprint of 470 mm by 580 mm fits standard counter depths, leaving room for food trays on either side.
Cleaning follows from the construction: the blade guard and carriage are taken off, washed in hot water with detergent, and dried before reassembly. The blade is wiped with a damp cloth, then sharpened to restore the edge. The anodised aluminium surfaces are wiped down with a sanitising solution to meet hygiene standards.
The AFG275 is a single model; no variants are listed. It is designed for slicing meat, sausages, cheese and similar deli products in restaurants, cafés and retail food outlets.
