A bandsaw built for continuous butchery production slices large primal cuts into steaks, chops and portion-controlled servings without tearing the grain. The endless loop of toothed blade runs over two wheels; one wheel is driven by the motor, the other keeps the blade taut and aligned. The blade moves in a single vertical plane, so every cut follows the same line and the operator can feed the meat steadily against the sliding work surface. Because the blade is narrow, it removes only a thin kerf of meat, leaving more usable product on the tray.
To begin work, the operator unlocks the portioning device and sets the desired thickness. The meat pusher slides along the stainless-steel work surface, pressing the cut against the portioning stop. Once the thickness is set, the operator starts the motor with the push-button panel. The blade accelerates to full speed; proximity sensors confirm the blade guard is closed before power reaches the drive wheel. The operator feeds the meat into the blade, using the pusher to keep fingers clear of the moving teeth. Sawdust and small trimmings fall through the blade slot into a removable drawer beneath the work surface, keeping the floor clear and reducing waste.
The 400ST is constructed from stainless steel AISI 304 for corrosion resistance and easy cleaning. The sliding work surface, portioning device, meat pusher, adjustable blade guide and blade protection are all made of the same grade. A low-voltage electrical panel (24 V) controls the motor and safety circuits, while proximity magnetic sensors monitor the blade guard and emergency stop. A mechanical safety brake stops the blade within seconds if the guard is opened or power is cut.
The 1.5 kW motor draws 400 V three-phase power, suitable for a commercial kitchen supply. The 2800 rpm drive speed keeps the blade moving at a steady pace for clean cuts. At 191 kg and 960 × 920 × 1825 mm, the unit is floor-standing and requires a dedicated space near the butchery worktop. The weight ensures stability during heavy use, while the footprint allows access from all sides for cleaning and maintenance.
Cleaning follows the stainless-steel construction: the work surface, portioning device, pusher and blade guard are wiped down after each shift. The sawdust drawer is emptied regularly to prevent build-up. The blade guide and protection are adjusted only when the machine is powered off and the blade has come to a complete stop. No other maintenance is required beyond routine inspection of the belts and sensors.
