The SAVIOLI Bone Saw 2000VT is designed for efficient cutting through bone and frozen meat using a continuous-band blade. The blade operates in a vertical loop, driven by a motor on the lower pulley while the upper pulley maintains tension. A stainless-steel guide ensures the blade remains steady, preventing deviation that could compromise the cut or damage the blade. Meat is placed on a stainless-steel table and advanced with an aluminium pusher, keeping the operator's hands safely away from the moving band.
Operation begins by opening the front door, which activates a microswitch to cut power to the blade. Once the door is closed, the motor starts, and the blade reaches its operational speed. Meat is positioned on the table and gently pushed against the blade, with an adjustable guide controlling the depth of the cut. After portioning, the pusher is retracted, and the door is opened to retrieve the cut pieces. A mechanical brake halts the blade quickly when the door is opened, minimising coasting time and enhancing safety.
The frame is constructed from painted aluminium, offering a balance of lightweight design and resistance to corrosion in damp conditions. The work surface and portioning components are made from stainless steel AISI 304, known for its durability and ease of cleaning. Both the blade protection and adjustable guide are also stainless steel. The electrical panel operates at a low voltage of 24 V for safety, while the motor requires a 400 V three-phase supply, standard for heavy-duty butchery equipment.
A 1.1 kW motor delivers sufficient torque to maintain consistent blade speed, ensuring smooth cuts even through dense bone. Weighing 40 kg, the saw remains stable on the floor without anchoring but can be moved by two people if necessary. Its dimensions of 540 by 470 mm allow it to fit on a standard worktop or mobile stand, providing space for meat trays on either side.
Maintenance involves cleaning the exposed parts: the stainless-steel table, blade guide, and pusher are wiped down after each use, while the blade is removed weekly for sharpening and sanitising. The painted aluminium frame should be cleaned with a damp cloth and mild detergent, avoiding abrasive materials that could harm the finish.
