A bone saw slices through frozen and fresh bone without shattering, using a continuous stainless-steel blade driven by a motor. The blade runs at a steady speed, guided by rollers that keep it aligned and reduce friction. A meat pusher presses the joint against the blade while the operator keeps hands clear of the cutting line. The method leaves clean, straight cuts and minimises waste in butchery and meat-processing kitchens.
To operate, the operator opens the front door, places the meat on the stainless-steel work surface and positions the portioning device to set the desired thickness. The meat pusher is lowered onto the joint, the door is closed and the microswitch starts the motor. The blade moves at a constant speed while the safety brake stops it instantly if the door is opened. Once the cut is complete, the operator removes the slices and resets the portioning device for the next joint.
The frame is painted aluminium, chosen for its light weight and resistance to corrosion in wet environments. The work surface and portioning device are stainless steel AISI 304, which withstands frequent cleaning and contact with meat acids. An adjustable blade guide keeps the blade aligned, and a stainless-steel blade protection prevents accidental contact. The meat pusher is aluminium, light enough to handle easily. A low-voltage electrical panel (24 V) controls the motor and safety circuits, reducing the risk of electric shock.
The 1.1 kW motor draws power from a 400 V three-phase supply, the standard circuit in professional kitchens for heavy equipment. The 1400 rpm blade speed balances cutting efficiency with safety, giving a steady feed rate without overheating the blade.
