A solid butcher block provides a stable, hygienic surface for cutting, portioning and preparing meat and other foods in a professional kitchen. The thick worktop absorbs the impact of knives and cleavers without chipping or splintering, while its non-porous material resists stains and bacterial growth. The weight of the block keeps it firmly in place during vigorous work, eliminating the need for clamps or non-slip mats.
The 80 mm polyethylene top is designed to withstand repeated contact with blades, moisture and food acids. Its smooth, seamless surface allows quick wipe-downs between tasks, and the material does not dull knives as quickly as harder surfaces. Beneath the top, a welded tubular frame in AISI 304 stainless steel carries the load without joints that could trap debris or corrode. The frame is treated with micro shot peening in ceramic spheres, which smooths the welds and increases resistance to scratches and chemical cleaning agents.
To use the block, position it on a level floor where it will not obstruct traffic or fire exits. Place cutting boards or trays directly on the polyethylene surface; no additional protection is required. After each service, wipe the top with a sanitising solution and dry it to prevent water pooling. The stainless steel base can be cleaned with a damp cloth and a mild detergent, avoiding abrasive pads that could damage the peened finish.
The block measures 1000 mm in length, 500 mm in width and 900 mm in height, giving a generous work area while fitting through standard kitchen doorways. Its footprint suits island or wall-mounted layouts, and the height allows comfortable standing work for most operators. The 80 mm top thickness adds durability without making the unit excessively heavy for repositioning.
