A hydraulic meat tenderizer breaks down tough fibres, cartilage and connective tissue in meat without tearing or shredding. The machine uses a piston-driven press to lower a grid of sharp blades and knives through the meat at controlled pressure. Each pass severs the fibres cleanly, leaving the surface intact while making the cut more uniform and easier to portion, marinate or cook. The process also shortens cooking times and improves yield by reducing shrinkage.
The operator places the meat on the polyethylene work surface, closes the safety cover and starts the cycle. The piston descends, the blades and knives pierce the meat, then retract automatically. The emergency microswitch on the cover stops the machine instantly if the cover is opened during operation, while the low-voltage control panel reduces electrical risk.
The INT-IDRA is built from stainless steel for the frame and moving parts, and polyethylene for the food-contact surface. The blade system consists of 46 blades, each carrying 12 knives, giving a total of 552 cutting points that ensure even treatment across the entire piece of meat.
