A meat mixer blends seasonings, fats and lean cuts into a uniform emulsion without overworking the fibres. The dual paddles rotate in opposite directions, folding the mass rather than chopping it. This motion keeps the temperature low and the texture open, so the finished product holds moisture and retains a natural bite. The process is continuous: the paddles sweep the entire volume, leaving no dead spots where ingredients could clump or separate.
Load the tank with up to 50 kg of meat or 66 L of ingredients. Close the hinged cover; the emergency microswitch cuts power if the cover is open during operation. Set the programme on the low-voltage electric panel. The paddles begin to turn, drawing the mass towards the centre and then pushing it outwards against the tank walls. When the cycle finishes, tilt the tank to 90° for easy emptying into trays or trolleys. The paddles lift out for cleaning and sharpening.
The mixer stands on a stainless steel bench that raises the working height to a comfortable level. The tank and paddles are also stainless steel, resisting corrosion and holding no flavour from one batch to the next. A single 1.85 kW motor drives both paddles through a gearbox, reducing the load on the electrical supply. The 400 V three-phase connection matches the circuits used in professional kitchens and food-processing rooms. At 90 kg, the unit is heavy enough to stay stable during mixing but light enough to move with a pallet truck or sack trolley. The footprint of 800 mm by 565 mm fits between worktops or against a wall, leaving space for trays and utensils.
Cleaning follows the removable parts: lift out the paddles, rinse the tank and wipe the bench. The low-voltage panel stays sealed against splashes, so only the exterior needs a damp cloth. The tipping mechanism should be checked for smooth operation after every deep clean to prevent strain on the motor or gearbox.
