A meat mincer built for volume service, the SAVIOLI ME50M processes up to 50 kg of meat in a single batch without reloading. The unit sits on the worktop, freeing floor space while keeping the feed hopper at a comfortable working height. The operating principle is straightforward: a helical auger inside a stainless steel barrel draws the meat from the hopper, compresses it against a perforated plate, and forces it through the holes to produce a consistent mince. The single paddle inside the hopper keeps the meat moving steadily into the auger, preventing bridging and ensuring even feed. Because the auger runs at a controlled speed, the mince emerges with minimal temperature rise, preserving texture and moisture. To operate the mincer, the operator tips the hopper back to load the meat, then returns it to the vertical position. The removable paddle is inserted, the cover closed, and the motor started. Once the batch is complete, the hopper is tipped forward through 90° to empty any remaining scraps. A safety microswitch on the cover cuts power instantly if the cover is opened during operation, stopping the auger and paddle. The entire structure is stainless steel, including the bench frame, hopper, barrel and auger housing. The hopper pivots on stainless steel bearings, and the tipping mechanism is operated by a simple lever. The electric panel is low-voltage (24 V) for added safety in wet environments. A 1.5 kW motor drives the auger, drawing 400 V three-phase power. This rating places the mincer on a dedicated circuit in most professional kitchens, where it can run continuously without overloading the supply. The 80 kg weight keeps the unit stable on the worktop, while the 800 mm length and 460 mm width fit within a standard work surface. The 1020 mm height allows the operator to load from a standing position without bending. Cleaning follows from the construction: the removable paddle and perforated plate are taken out and washed separately, while the hopper and barrel are rinsed with hot water and sanitiser. The stainless steel surfaces resist corrosion and can be scrubbed with non-abrasive pads. The low-voltage panel is wiped with a damp cloth and never sprayed directly. The ME50M is supplied with one paddle as standard, matching the single-auger design. This single-paddle design ensures consistent mincing without overloading the motor in high-volume service.
