Used to fill sausages and cold meats.
Suitable for butcheries and meat industry.
A vertical hydraulic sausage filler uses a sealed cylinder and a hand-operated or motor-driven pump to push meat through a funnel under steady pressure. The cylinder stands upright, so gravity helps feed the mixture into the pump chamber without air pockets. Hydraulic pressure gives smooth, consistent flow, letting the operator control filling speed by adjusting the oil flow rather than by manual force. This method keeps the meat mix homogeneous and prevents fat separation, which is critical for uniform texture and binding in sausages.
To use the filler, the operator loads the 35 L cylinder with prepared meat mix, selects the funnel that matches the sausage casing diameter, and fits it to the outlet. The motor is switched on, and the high-precision oil flow controller is set to the desired filling speed. As the pump pressurises the cylinder, the meat is forced through the funnel into the casing. The operator guides the casing, watching for even filling and adjusting the flow as needed. Once the cylinder is empty, the motor is stopped, the funnel removed, and the filled sausages are tied off.
The structure and cylinder are made of stainless steel, which resists corrosion from meat acids and cleaning chemicals. The base is fitted with rubber wheels for mobility around the worktop. Three polyethylene funnels are supplied, sized for 10 mm, 18 mm and 25 mm casings, allowing the same unit to produce different sausage diameters without changing equipment.
The 0.56 kW motor draws power from a 400 V three-phase supply, which is standard for professional kitchen equipment and provides the torque needed for continuous filling. The 35 L volume allows large batches to be processed without refilling, reducing downtime. The unit weighs 101 kg, so the wheels are essential for moving it into position. Its footprint of 640 mm by 480 mm fits on most worktops, leaving space for casings and tying tools.
Cleaning involves disassembling the funnel and washing it in hot water with food-safe detergent. The stainless steel cylinder and structure are wiped down with a sanitising cloth, and the oil flow controller is checked for leaks. The rubber wheels should be cleaned to prevent debris from transferring to the worktop.
The SAVIOLI INS35 V is a single model with no variants, supplied with the three funnels as standard. It is categorised under sausage-making equipment in the professional catering catalogue.
