A built-in blast chiller rapidly lowers the temperature of hot food to safe storage levels, preventing bacterial growth and locking in moisture, texture and nutrients. Unlike a standard refrigerator, which cools slowly and unevenly, a blast chiller pulls heat out of food at high speed by circulating cold air at controlled velocity. This method halts the cooking process immediately, extends shelf life and allows kitchens to prepare dishes in advance without compromising quality.
The ILVE BC645SNTC 40 litre blast chiller is installed directly into a worktop or cupboard run, taking the place of a standard under-counter unit. Food is loaded onto the internal tray or rack, the door closed, and the programme selected. The unit then chills the contents to the target temperature, automatically switching to holding mode once the cycle completes. The operator removes the food and either stores it in a refrigerator or freezer, or moves it to the next stage of preparation.
Constructed from AISI 304 stainless steel, the exterior and interior resist corrosion and staining, while the smooth surfaces allow quick wipe-down after each use. The 40 litre capacity holds a single gastronorm tray or multiple smaller containers, making it suitable for small to medium service volumes.
Controls on the front panel set the chilling programme, target temperature and duration. The unit draws 300 kW of power, requiring a dedicated circuit to handle the load without tripping breakers in a busy kitchen. Its 596 mm width, 572 mm depth and 455 mm height fit standard under-counter spaces, allowing seamless integration into existing layouts.
Regular upkeep involves emptying and cleaning the interior after each use, wiping the door seal to prevent debris build-up, and checking the air intake and exhaust vents for blockages. The stainless steel finish requires no special treatment beyond standard kitchen sanitiser.
