A built-in blast chiller rapidly lowers the temperature of cooked or fresh food, locking in moisture, texture and nutrients. By pulling heat out far faster than a refrigerator, it prevents bacterial growth and extends shelf life without freezing. The ILVE BC645STC integrates this process into a professional kitchen worktop, allowing immediate chilling after cooking or delivery.
The unit circulates cold air at high velocity across every tray, ensuring even cooling from edge to centre. This method avoids the ice crystals and cell damage that slow freezing creates, preserving the original quality of sauces, meats, vegetables and pre-prepared dishes. A separate low-temperature cooking programme maintains precise warmth for extended periods, enabling sous-vide results without a water bath.
To operate, load the 40 L stainless steel cabinet with trays of hot or ambient food. Select the rapid-chill or low-temperature cooking mode on the control panel, then start the cycle. The appliance monitors internal temperature and adjusts airflow until the target is reached, at which point it holds or shuts off automatically. Once complete, food can be transferred to refrigerated storage or served immediately.
Constructed from AISI 304 stainless steel, the BC645STC resists corrosion and withstands daily cleaning. Its 596 mm width, 572 mm depth and 455 mm height allow seamless installation into standard worktop cut-outs, with the front panel flush to surrounding cabinetry.
The 300 kW power rating reflects the load drawn during peak cooling, requiring a dedicated circuit in a commercial kitchen. The 40 L volume determines the quantity of food processed in each cycle, suitable for medium-scale service or preparation ahead of peak periods.
Cleaning involves wiping the interior with a damp cloth and mild detergent after each use, then sanitising with an approved solution. The smooth stainless steel surfaces and removable trays simplify maintenance, while the sealed cooling system requires no user intervention.
