A 100 cm professional stove that combines the precision of induction cooking with the responsiveness of gas burners and the capacity of two separate electric ovens. The ILVE Nostalgie PD10INE3 places a 60 cm oven and a 40 cm oven side by side beneath a worktop that carries four gas burners and two induction zones, letting a kitchen run multiple programmes at once without cross-contamination of flavours or aromas. Electric ovens of this type circulate hot air with a fan, distributing heat evenly across every shelf. The fan draws air from the cavity, passes it over a heating element, and returns it at a controlled temperature. This forced convection shortens cooking times and eliminates cold spots, so dishes that require different temperatures can be baked or roasted simultaneously on separate levels. The ovens in the PD10INE3 operate between 30 °C and 320 °C, covering everything from gentle proofing and low-temperature dehydration to high-heat searing and browning. On the hob, gas burners provide instant adjustment of flame size, while the induction zones use an electromagnetic field to heat the pan directly. The field is generated beneath the ceramic surface and only activates when a ferrous pan is placed on it, so the zones remain cool to the touch when not in use. The combination lets chefs switch quickly between rapid boiling, delicate simmering, and precise temperature control for sauces or confectionery. To operate the stove, the user first selects the oven programme on the electronic control panel. Each oven has its own set of buttons and a digital display, allowing independent settings for temperature, cooking mode, and timer. The gas burners are lit with a built-in ignition system, and the induction zones are activated by placing a compatible pan on the zone and adjusting the power level with the touch controls. Throughout cooking, the digital displays show the current temperature and remaining time, while indicator lights confirm which elements are active. The stove is constructed from stainless steel with a choice of finishes: copper or any RAL Classic colour. The 1000 mm width, 600 mm depth, and 860 mm height create a substantial footprint that anchors a professional worktop, while the dual-oven configuration maximises usable cavity space without increasing the external dimensions. The worktop itself is designed to support heavy pans and withstand the heat of both gas and induction cooking. The seamless copper trim and enamel interiors shrug off splatters, letting you wipe the ovens down between roasts without scraping or soaking. The stainless-steel exterior can be wiped down with a damp cloth and mild detergent, while the induction zones, being smooth ceramic, allow spills to be scraped off once cool. The ovens are equipped with removable shelves and side rails, so the cavities can be accessed for thorough cleaning. The gas burners are removable for cleaning of the ports and caps, and the induction zones require no additional maintenance beyond keeping the surface free of debris. The PD10INE3 is available in copper with a burnished finish or in any RAL Classic colour, each option carrying a separate price adjustment. The stove is categorised under professional ranges and dual-fuel cooking appliances.
