Gas hobs in stainless steel flat frame
A gas hob that brings precise flame control to a professional worktop, the ILVE Panoramagic HCPMT125DD fits flush into a 120 cm cut-out. Gas hobs heat by combustion: a controlled flow of natural gas or propane mixes with air and ignites at the burner, producing an immediate, adjustable flame. The heat transfers directly to the pan base, giving instant response when the operator turns the knob up or down. Because the flame is visible and the pan sits on a stable support, the chef can judge heat levels by sight and touch, adjusting quickly for searing, simmering or holding temperatures without waiting for an element to warm or cool.
The sequence of use follows the layout of the burners. The operator places a pan on one of the cast iron supports, selects the corresponding knob and presses it to engage the integrated ignition. Turning the knob opens the gas valve, and the flame appears. Each burner has a low-power simmer setting and a high-power boost, allowing the same hob to handle delicate sauces and rapid boiling. When the pan is removed, the flame is extinguished by turning the knob to the off position, and the pan support can be lifted away for cleaning.
Construction centres on the brass flame spreaders, which distribute gas evenly across the burner head. A nanotechnological treatment on the spreaders resists grease and carbon build-up, reducing the frequency of deep cleaning. The pan supports are cast iron, chosen for its weight and stability; they sit directly on the hob surface without clips or screws. Knobs are positioned along the front edge, each marked for its burner and with a tactile indicator for the simmer setting.
The power ratings—1.8 kW, 3 kW and 4.5 kW—determine the maximum load on the gas supply. A 4.5 kW burner draws more gas per hour than a domestic ring, so the installation must include a pipe and regulator sized for commercial use. The 1200 mm width fits a standard worktop cut-out, leaving space on either side for food preparation or additional appliances.
Cleaning involves removing the pan supports and wiping the hob surface with a damp cloth. The brass flame spreaders can be lifted off for soaking in warm water, and the nanotechnological coating helps prevent baked-on residue. The cast iron supports are washed separately and dried to prevent rust.
