A gas hob heats pans directly by burning gas at the burner, transferring energy without waiting for a surface to warm. The flame adjusts instantly, giving the chef control over heat from a gentle simmer to a rolling boil. Each burner on this ILVE Pro Line model is sized for a different task: the smallest for delicate sauces, the largest for rapid boiling or searing, and the two intermediate sizes for everyday cooking and holding at temperature. The sequence begins by placing the pan on the cast iron grid above the chosen burner. The integrated electric ignition lights the gas with a single turn of the knob, eliminating the need for a separate spark. The flame is then set to the required intensity, from a low pilot to full power, using the infinitely adjustable control. A safety valve cuts the gas supply if the flame is accidentally extinguished, preventing unburned gas from escaping into the kitchen. When the cooking is complete, the knob is turned off and the pan removed. Construction is built for daily service in a commercial kitchen. The grids are cast iron, which distributes heat evenly and withstands the weight of heavy stock pots. Burner caps are aluminium for efficient heat transfer, while the covers above them are enamelled to resist corrosion and staining.
