A vacuum packing drawer extracts air from a sealed chamber to slow spoilage and lock in flavour. The machine draws a near-complete vacuum around food placed inside a rigid container, then heat-seals the bag or pouch. Removing oxygen inhibits aerobic bacteria and mould, extending shelf life without preservatives. The same vacuum also compresses fibres in meat, speeding up marinating and tenderising without manual work.
The ILVE VM615SL is installed beneath a worktop as a built-in drawer. The operator loads the internal chamber with a bagged item, closes the drawer, and selects a programme. The machine evacuates air to one of four preset levels, then seals the pouch. A clear front panel lets the operator watch the process without opening the unit. When the cycle finishes, the drawer unlocks and can be pulled open to remove the sealed pack.
The exterior is stainless steel, matching standard kitchen finishes. The interior chamber measures 30 cm wide, 36 cm deep and 10 cm high, giving a usable volume of 7.5 litres. Controls are mounted on the front edge, keeping them accessible while the drawer is closed. A single power connection supplies the 240 kW load required for the vacuum pump and sealing element.
A 240 kW rating indicates a heavy electrical demand, requiring a dedicated circuit in a professional kitchen. The 596 mm width fits a standard 60 cm cabinet opening, while the 134 mm height allows installation beneath most worktops. The shallow 559 mm depth keeps the unit close to the wall, saving floor space.
Cleaning involves wiping the stainless steel surfaces and removing any food debris from the chamber after each use. The sealing bar should be checked regularly for residue that could prevent a complete seal. The drawer mechanism needs occasional lubrication to ensure smooth operation.
