air or water condensation
An ice maker that builds clear, solid cubes by spraying water onto a copper evaporator. The evaporator freezes the water layer by layer, producing ice that is dense, slow-melting and free of cloudiness. This method relies on precise temperature control and a steady water supply, ensuring each cube is consistent in size and clarity.
The operator connects the water inlet, sets the desired ice thickness on the timer, and starts the machine with the external on-off switch. The evaporator cycles through freezing and harvesting phases, dropping the finished cubes into the built-in container. A thermostat monitors the evaporator temperature, adjusting the refrigeration cycle to maintain the correct freezing point. The container holds the ice until it is needed, with a capacity of sixty kilogrammes and space for over sixteen hundred cubes.
The cabinet is constructed from stainless steel AISI 304, chosen for its resistance to corrosion and ease of cleaning in a busy kitchen. Cooling can be either air or water based, with the choice made during installation to suit the site conditions. The refrigerant used is R290, a hydrocarbon that provides efficient cooling while minimising environmental impact.
Controls are kept simple: a timer to set the ice thickness and a thermostat to regulate the evaporator temperature. The external on-off switch allows the machine to be started or stopped without opening the cabinet, reducing the risk of accidental contact with moving parts.
The power rating of 1.15 kW indicates the load the machine places on the electrical circuit. It requires a 230 V single-phase supply, the standard voltage for commercial kitchen equipment in the UK. The weight of ninety-five kilogrammes means the unit is moved with a trolley or two-person lift, and the footprint of 715 by 700 millimetres determines the space it occupies on the floor or worktop.
Cleaning involves flushing the water system to remove mineral deposits, particularly if the local water is hard. A water softener and filter are recommended to maintain ice clarity and prevent scale build-up on the evaporator. The stainless steel surfaces are wiped down regularly to keep the machine hygienic and presentable.
The GALA 110 kg model is placed in the catalogue under commercial refrigeration, specifically ice makers for professional catering use.
