An ice generator that produces clear, crystalline cubes by spraying water onto a copper evaporator. As the water freezes on contact, it forms solid pieces that drop into the storage container once the cycle completes. This method ensures consistent shape and clarity without cloudiness, provided the water supply is filtered and softened.
The operator connects the water inlet, sets the external on/off switch to on, and the unit begins its automatic cycle. Water is sprayed in timed pulses onto the cold evaporator, freezing layer by layer until each cube reaches the set thickness. A thermostat monitors the evaporator temperature, and when the ice is ready, a brief defrost phase loosens the cubes so they fall into the container below. The process repeats until the container reaches its 20 kg capacity, at which point the machine pauses until ice is removed.
Built from stainless steel AISI 304, the cabinet resists corrosion and stands up to daily use in a professional kitchen. The evaporator is copper, chosen for its rapid heat transfer, while the refrigerant R290 circulates through the sealed system. Cooling can be either air-based or water-based, selected during installation to suit the kitchen's ventilation and plumbing. An external on/off switch allows immediate isolation without opening the cabinet.
