The sequence begins with water drawn from the supply, filtered and softened to prevent scale. It is then sprayed in a fine mist over the chilled evaporator. As the water freezes, the machine cycles, releasing the cubes into the storage container below. A thermostat monitors the evaporator temperature, while a timer controls the cycle length, ensuring consistent cube size. The operator starts the unit with an external on/off switch, and the machine continues producing ice until the container reaches its 15 kg capacity or the timer halts the process.
Built from stainless steel AISI 304, the unit resists corrosion and stands up to daily use in a professional kitchen. The refrigerant is R290, a hydrocarbon that cools effectively while having a lower environmental impact than older refrigerants. Cooling can be either water-based or air-based, selected by a technician during installation to suit the kitchen's layout and available services.
