A 100-litre electric kettle built for continuous service in professional kitchens, the LOTUS PI100-98ETX heats liquids indirectly to prevent scorching and ensure even temperature distribution. Instead of placing the element in direct contact with the contents, heat is transferred through a water jacket or steam chamber that surrounds the inner vessel. This method eliminates hot spots, reduces the risk of burning delicate sauces or stocks, and allows gentle simmering without constant stirring.

The operator fills the inner tank through the ergonomic hinged lid, sets the desired temperature on the thermostat, and starts the heating cycle. A clear control panel displays the current temperature and power status, while the insulated jacket retains heat and protects staff from accidental contact. Once the target temperature is reached, the kettle maintains it automatically, freeing the chef to attend to other tasks. When the batch is ready, the contents are drawn off through the tap or the lid is lifted for ladling.

Construction is entirely in stainless steel, with an inner vessel of AISI 304 and a base of AISI 316 for extra corrosion resistance. The 2 mm-thick work surface has rounded edges and a Scotch-Brite satin finish that resists scratches and fingerprints. Chrome-plated details and a rear protective panel give a clean, commercial appearance. Water-resistant IPX5-rated control handles allow safe operation near sinks and hoses, and adjustable feet ensure a stable, level installation on uneven floors.

The 21 kW power rating requires a 400/440 V three-phase supply, the standard for heavy-duty catering equipment in the UK. The 800 × 900 × 900 mm footprint fits within most commercial kitchen layouts, while the 120 kg weight indicates a robust, fixed installation rather than a portable unit. A 100 L capacity allows large batches of soups, stocks or sauces to be prepared in a single cycle, reducing the need for repeated refills during service.

Cleaning is straightforward: the front control panel removes easily, giving access to all internal parts for wiping down or descaling. The indirect-heat design means there is no element to scrub, and the smooth stainless surfaces release residue without scraping.

The model PI100-98ETX is the 100 L variant in the LOTUS professional kettle range, positioned for medium to large catering operations that require consistent, controlled heating of liquids.
