A frying basket holds food clear of the heating element while oil circulates freely around every piece. The mesh construction allows hot oil to rise through the load, cooking the surface evenly and quickly. The same openings let excess oil drain away when the basket is lifted, so fried items emerge crisp rather than greasy. This design is standard for professional fryers because it keeps the oil temperature stable and the food moving, preventing cold spots that would leave some pieces undercooked.
To use the basket, lower it into the pre-heated oil vat until the food is fully submerged. The handles stay above the oil line, so they remain cool and easy to grip. When the timer signals, lift the basket straight up to let the oil drain back into the vat. The basket's dimensions match the vat's internal shape, so it does not block the heating element or the oil flow.
The basket is made of stainless steel mesh and a solid steel frame. The mesh resists corrosion from hot oil and cleaning chemicals, while the frame keeps the shape rigid under repeated lifting. The handles are welded to the frame for strength.
The 140 mm width, 320 mm length and 200 mm height fit the CP-74 and CP-78 fryer vats, ensuring the basket sits level and the oil circulates evenly around the food. The size allows a single layer of portions, so each piece cooks at the same rate.
Cleaning follows the fryer's own routine: soak the basket in hot detergent to loosen oil residue, then scrub with a non-abrasive pad. Rinse and dry before storing to prevent corrosion.
This basket is a direct replacement for the original LOTUS part on CP-74 and CP-78 fryers.
